Salt should be produced at the rate of 3 tablespoons of salt and 1 tablespoon of pepper per 1 kg of fat. First cut garlic (large cubes or straws). Now cut the fat with thick enough plates - about 5 cm wide each. After cutting, we pile the plates with garlic and roll them in the salty mixture. Next, we take enamel dishes and put the fat plates tightly together, without forgetting to sprinkle every layer with spices abundantly. Close the dishes and leave the fat for 5 days for pickling. Put it in a cool place where sunlight does not penetrate. After that, we take out the fat and wrap it with food film. Store the salted fat either in the refrigerator or in the freezer. Shelf life in the refrigerator is about a month, but in the freezer salted lard can lie even for a whole year without any problems!

How to store smoked bacon

To smoke the fat, we need a specialsmokehouse, as well as firewood. For wood, it is better to choose such varieties of wood as alder, poplar or willow. Now we are preparing a mixture of spices according to the previous recipe. That is, for 1 kg of fat we take 3 tablespoons. salt and 1 tbsp. ground black pepper. Cut the fat into long enough strips (about 20 cm each) and then roll them in a mixture of spices, then put in the refrigerator, where they must lie for three days. Then we take out the fat, wipe it well with paper napkins and plant the stripes of lard on the hooks of the smokehouse. Now the fat should be kept on smoke for about 3 hours, after which it will be ready for consumption. Smoked bacon is stored longer than salted, so even in the refrigerator it is absolutely calm for you at least a year.

How to store lard - overturned lard

For the preparation of overheated fat, rinseraw lard in water and cut into plates. Now put the pan on the fire and, while it heats up, gradually put all the plates on the bottom of the pan. Melt fat should be on low heat. Appearing fat should be removed with a spoon and passed into pre-prepared clay or glass dishes through gauze. You can store such fat for at least three years - again, in the refrigerator. And by the way, overturned fat is not only eaten, but used for other purposes - for example, in cosmetic.
